Vinification and Aging
Grape Composition: 85% Mencía, 10% Alicante Bouschet, and 5% a blend of white and other red varieties, encompassing up to 12 different grape types.
Harvest: Hand-harvested on September 12, 2023, from vines over 100 years old, situated at an altitude of 710 meters.
Soil: Slate.
Fermentation: Conducted in open containers without temperature control, separating parts of the plot. Approximately 30% whole clusters were included.
Maceration: Lasted for 21 days, with daily manual cap submersion without breaking it.
Aging: The wine was aged for 12 months in French oak barrels of 600 liters and a 1,200-liter foudre.
Bottling: January 15, 2025.
