Vinification and Aging

  • Harvest: 100% manual, with careful grape selection in 15 kg boxes.
  • Vinification: Total destemming followed by pre-fermentation maceration at 8°C for 48 hours. Fermentation takes place in traditional lagares at a controlled temperature of 24°C.
  • Aging: 24 months in French oak barrels, followed by 12 months of bottle maturation.

Tasting Notes

  • Color: Deep garnet, almost opaque.
  • Aroma: Complex bouquet dominated by dark fruit notes, complemented by balsamic hints, spices, and subtle smoky nuances.
  • Palate: Vibrant and full-bodied, with excellent balance between structure and acidity. Displays characteristics that suggest great aging potential.
